You won't miss the meat in this St. Patrick's Day-inspired take on a patty melt. The tender, leafy parts of Lacinato kale and mustard greens are boiled until just-tender before they're sauteed with a garlicky onion blend and rice vinegar for a flavor boost that's great on its own. Buttered French bread slices are topped with Irish white Cheddar cheese on one slice, before our braised greens top the other. The sandwich comes together and is flipped and fried until golden, crispy, and melty.
