Chef John's Cincinnati-Style Chili

Making this beloved, regional chili is as simple as combining ground beef with tomato paste and a blend of savory and sweet spices and seasonings in a large pot over medium-high heat. As soon as we bring it to a boil, just reduce it to a simmer and let it cook to a desired thickness. In the meantime, we boil some spaghetti until tender to prepare for our plating.
