Chef John's Cincinnati-Style Chili
Making this beloved, regional chili is as simple as combining ground beef with tomato paste and a blend of savory and sweet spices and seasonings in a large pot over medium-high heat. As soon as we bring it to a boil, just reduce it to a simmer and let it cook to a desired thickness. In the meantime, we boil some spaghetti until tender to prepare for our plating. Dish out some noodles, ladle on some chili, and top it all off with some diced onion and grated Cheddar cheese for what Cincinnati natives call a “Four-Way.” Get the recipe for Chef John's Cincinnati-Style Chili.
