Norwegian Potato Flatbread (Lefse)
This easy Norwegian staple starts off with roasting a potato in the oven until tender before mashing it with butter, salt, sugar, and cream until smooth. After being chilled for a couple of hours, flour is kneaded into the dough until it's soft and not too sticky. This gets wrapped in plastic and chilled once again before it's divided into 8 portions that are rolled out thin on a floured surface. Time to cook! The lefse get pan-fried one at a time over medium-high heat until golden brown blisters form, stacking them on a plate as we go to cover and keep warm. And that's it!
