Norwegian Potato Flatbread (Lefse)

This easy Norwegian staple starts off with roasting a potato in the oven until tender before mashing it with butter, salt, sugar, and cream until smooth. After being chilled for a couple of hours, flour is kneaded into the dough until it's soft and not too sticky. This gets wrapped in plastic and chilled once again before it's divided into 8 portions that are rolled out thin on a floured surface. Time to cook! The lefse get pan-fried one at a time over medium-high heat until golden brown blisters form, stacking them on a plate as we go to cover and keep warm. And that's it! Serve with any toppings you like such as smoked salmon and dill, berry jam and sour cream, or the traditional butter and sugar. Get Chef John's recipe for Norwegian Potato Flatbread (Lefse).
