Turkish Eggs (Cilbir)

If you thought you've eaten every kind of egg dish out there, think again. Called "cilbir" in Turkish, this delicious method of serving freshly cooked eggs over a bed of yogurt and chili-infused oils impressed even veteran Chef John. For the yogurt base, you'll mix fresh garlic and dill into Greek yogurt and let it come to room temp before topping with poached or fried eggs of your choice. And don't forget the flavor agents: two infused oils that come together quickly but pack a huge punch. Simply swirl Aleppo pepper flakes into melted butter and let it infuse while you grind up some jalapeno and parsley and swirl in the olive oil.
