Dirty, Dirty Rice
Like the Popeyes(R) version, Chef John's "dirty rice" involves cooking the plain ol' grain in a flavorful broth alongside exciting aromatic vegetables and chicken livers, resulting in a hearty one-pot dinner. Yes, prepare to cut up chicken livers, because sometimes you've gotta get down and dirty to glam up your rice. For even more filthy-delicious results, Chef John piles on more "dirt," namely diced pork shoulder, andouille sausage, and lots of dried herbs and Cajun-inspired spices. Sauteed altogether, these bold flavor elements are cooked directly into the rice and broth. You'll need to check it only once, before the rice is quite done, to add in some poppin' fresh herbs.
