Bacon-Wrapped Cranberry Walnut Pork

We start by butterflying and flattening a pork tenderloin before we spread Dijon mustard down the middle and sprinkle on the herbs, bread crumbs, walnuts, and cranberries. After tucking in the ends and rolling up the tenderloin into a long tube, we chill it for 1 hour before we wrap it in thinly sliced bacon. Then it's off to roast in a preheated oven for 25 to 30 minutes. During the roasting time, we prepare a super simple pan sauce on the stovetop from white wine, balsamic vinegar, Dijon, and butter to serve alongside our festive masterpiece.
