Bombay Breakfast Potatoes

For a more exotic change of pace to a classic breakfast staple, we boil our potatoes first in an Indian-inspired spice mixture of cumin, coriander, turmeric, and cayenne before allowing them to chill overnight in the refrigerator. Heat some butter and oil on the stovetop over medium heat, add our spiced pre-cooked and chilled potatoes, more of the spice mix, green onions, and chile peppers, and pan-fry to golden, fluffy perfection for just 3 to 5 minutes per side.
