Easy Red Chicken Enchiladas

Making enchilada sauce from scratch couldn't be less of a hassle when you can spread it over multiple meals. In this video Chef John bakes individual skillet enchiladas using shredded, cooked chicken, fresh green herbs, and cheese layered between mini corn tortillas. Doused over everything is an easy homemade red sauce that begins with sauteed onions, into which flour, spices, and tomato paste are toasted until your kitchen smells divine. From there, just add chicken broth and let it simmer for 15 minutes before blending.
