Chef John's new favorite grilled pork comes in the form of these Penang-inspired skewers marinated in an authentic satay sauce bursting with exciting flavors from all over the spectrum. Seriously: spicy, sweet, tangy, and super savory, all the flavors build up layer by layer with a mix of fresh turmeric, ginger, shallots, cilantro, tamarind, fish sauce, vinegar and 2 kinds of chili powder. Add a splash of coconut milk for authenticity, but chances are you won't miss it. Let those large chunks of pork shoulder luxuriate in this marinade for 4 to 18 hours before grilling, and the outsides will develop a beautifully brown crust in about 20 minutes.
