Laotian Grilled Chicken (Ping Gai)

You'll want to give your chicken thighs 4 to 12 hours to fully appreciate the delicious marinade for this Laotian take on grilled chicken, or ping gai. Very tasty things happen when bounties of freshly chopped cilantro and freshly ground black pepper collide, aided by an umami Asian sauce trifecta comprising soy, fish, and oyster sauces. While the chicken marinates, mix up the quick and easy dipping sauce of rice vinegar, lime juice, garlic, chili paste, honey, and--you guessed it-- more fish sauce and cilantro! With just about 10 minutes on the grill, the chicken is ready to impress, alongside that sweet, garlicky sauce and your choice of cucumber salad, rice, or any number of delicious sides.
