Chef John's Copycat McRib® Sandwich
Everyone loves gnawing on bone-in ribs, but there's also something satisfying, nay, luxurious, about biting into a boneless baby back rib sandwich slathered in barbeque sauce and freshened up with crunchy-cool coleslaw. Start by coating two racks of ribs with a simple dry rub like the one shown here. Pop them in the oven, where they'll bake low and slow for about 3 hours. This makes it super easy to slide the bones right out before chilling the ribs overnight. The next day, just cut the ribs into sandwich-sized sections, brush on your favorite barbeque sauce, and reheat them on the grill for that final blast of flavor.
