Spring Vegetable Tart
Welcome to the biggest garden party of the year, where all the best and brightest spring vegetables gather over a puff pastry crust filled with herbaceous goat cheese. Chef John chooses from elegantly cut veggies such as rainbow carrots, asparagus, sugar snap peas, and Romanesco, but you can go with any of your favorites. You'll start by shaping puff pastry into a sturdy crust and baking it twice, once in its own and the second time topped with a creamy, herb-filled goat cheese spread. While it cools, you'll have time to blanch your veggies and toss them with a simple lemon vinaigrette. Going onto the crust first are a few handfuls of mixed greens, followed by the blanched veggies, and finally some colorful adornments such as watermelon radish and cherry tomatoes.
