Baked "Fried" Rice

Craving fried rice but wish there were a shortcut? Can't seem to make a decent pot of rice on the stove? Never fear, Chef John is here with an easy oven-baked technique. By coating the rice with oil before adding the cooking liquid, you essentially make a rice pilaf, which yields the perfect texture every time. Everything goes into one baking dish, including any mix-ins you like, but you can't go wrong with finely diced ham, bell peppers, carrots, scallions, and peas, as shown here.
