Back in the good old days these hunger-ending hunks of glory owed their deliciousness to generous amounts of chicken fat, aka "schmaltz." Here, we swap the schmaltz for butter to create an equally moist, flaky, yeastless dough. Next up, you'll be putting the "Irish" in "knish" by adding stir-fried corned beef and cabbage, and all the accompany hearty rendered beef fat, to the classic mashed potato-onion filling.
