German Potato Dumplings (Kartoffelkloesse)

The world is rich with potato side dishes of all shapes and sizes. One you'll definitely want to try is Kartoffelkloesse, German potato dumplings filled with a small surprise center of fresh croutons. Similar to mashed potatoes in texture, the dough is made with common ingredients you'll probably find in your pantry. You'll also learn how to make the supporting element--homemade croutons sauteed in butter. The dough is then shaped into hearty balls and ever-so lightly stuffed with said croutons. After they're boiled, make sure to give them time to firm up a little before getting creative with your toppings. Chef John sprinkles his dumplings with the leftover brown butter and croutons, plus chives for a pop. Get the recipe for German Potato Dumplings (Kartoffelkloesse).
