Beer Floats

The key to a great beer float is simply pairing the right types of beer with the right flavors of ice cream. Do it right and you'll be wondering where these have been all your life. Here, Chef John offers two equally delicious approaches. First, chocolate stout (think Guinness(R)) meets coffee ice cream. Next up are a Belgian raspberry sour with classic vanilla. The best kinds of beer for floating-on lie usually on either the fruity, sour or the malty, toasty ends of the spectrum. Nothing too hoppy, dry, or bitter here. So, pick wisely and have fun with it!
