Processed through a meat grinder, these juicy links contain pork shoulder, fennel, anise, coriander, and many more spices, which you can adjust to your liking. The key, per Chef John's late uncle Billy, is drying the sausages throughout the process. Here, they are dried twice, once overnight and once for 24 hours.
