Chef John's Strawberry Semifreddo
While traditional semifreddo uses an egg custard base, this lighter, no-bake version cuts down on fats and sugar. Pureed strawberries, cream, Greek yogurt, and balsamic vinegar make up the creamy base, which is frozen into ramekins before it's topped with a simple cookie crust and frozen again.
