Make Chef John's version of a great rice and pasta side dish by starting with a top secret spice blend of salt, black pepper, celery salt, paprika, coriander, turmeric, dry mustard and cayenne pepper. Melt some butter in a large pan and cook your diced onion with orzo pasta until golden, then stir in your spice mix. Then add white long-grain rice and stir until coated in butter. Stir in chicken broth, bring to simmer, cover and cook. Let rest, add some chopped parsley and fluff. Serve mixed with vegetables or straight up paired with your favorite meat entrée.
