Begin your baklava by making the crunchy filling—process a combination of pistachios, walnuts and cinnamon into a coarse grind. Brush your pan with melted butter, then layer in phyllo dough and drip in melted butter every 2 layers. After a few layers, add a layer of nuts, then continue layers of phyllo, butter and nuts. Chill to solidify and then cut into diamonds and bake for an hour until beautifully browned. Make a boiled syrup with sugar, honey, 3 whole cloves, water, vanilla and orange blossom water and pour over the hot baklava.
