Grilled "Tandoori" Lamb

The key to Chef John's incredible lamb skewers is the tangy yogurt marinade. All you need to do is to whisk together cool yogurt with freshly squeezed lemon juice, onion, garlic, ginger, garam masala, cumin, paprika, cayenne and turmeric. Toss in chunks of fresh lamb into the marinade with salt and chill overnight, or at least 4 hours. When ready to cook, thread all the pieces onto skewers and wipe off most of the marinade. Drizzle with vegetable oil and finish with salt and place on a hot grill. Serve atop grilled red onion with lemon wedges and cilantro and enjoy every tender, delicious bite!
