The Brutus Salad
Chef John's simple salad will win you over with a quick yet powerful dressing. Choose the most intense Dijon mustard you can find to create the best, sharpest flavor, then add seasoned rice vinegar, vegetable, oil, Worcestershire sauce, black pepper and cayenne pepper. Set that aside and toast pecans in a pan and season with salt and sugar. Create your salad with romaine, thinly sliced apples, fresh dill and tarragon, add a handful of pecans and grate in sharp white Cheddar. Pour in your dressing, toss, and enjoy every decadent bite!
