Your new favorite way to eat eggplant is super easy to make. First create a brine by whisking together tamari sauce, Worcestershire sauce, maple syrup, black pepper, garlic powder, smoked paprika and cayenne pepper, then slowly whisk in olive oil and a touch of liquid smoke. Cut an eggplant in quarters, then use a mandoline to create super thin slices. Dip into the brine and arrange on parchment-lined sheets and slowly bake, then give a brush of the brine and bake until crisp!
