Chef John's biscuits are packed with Cheddar flavor. Make a mixture of self-rising flour (a mixture of flour, salt and baking powder) with baking soda, then blend with very cold butter and buttermilk until it becomes a shaggy dough. Press and roll dough into a rectangle, top with shredded Irish Cheddar and spring onions and fold dough, apply more cheese and onions, roll out and cut into biscuits.
