Chef John’s delicious version of the Cuban comfort food. Crumble ground beef in olive oil over heat, then add onions, salt, black pepper, cumin, cinnamon, bay leaves, cayenne. Add some garlic to the intensely spiced beef, then de-glaze with red wine vinegar and crushed tomatoes. Simmer with currants until meat is tender. Stir in sliced pimiento-stuffed green olives and simmer until all flavors intermingle and serve with white rice in a big bowl of sweet, spicy and vinegary happy, warm comfort.
