One of life’s great indulgences is greater when it’s homemade: salty, spicy refried beans. Learn from Chef John the great “re-frying” secret behind this delicious bean side dish. After soaking pinto beans in water overnight, add to a stockpot with fresh, cold water, garlic cloves and dried epazote, a Mexican herb. After simmering soft, add to a pot of onions softened in lard, diced serrano peppers and dried chipotle pepper. Then add liquid, cook and gently smash the beans until they’re the texture you crave.
