A nutritious and temptingly good brunch dish, this French toast begins with an awesome batter. Start with an egg and an egg yolk, then add coconut milk, sugar, pure vanilla extract and freshly grated nutmeg. Give it a mix with a whisk, then soak some very stale bread in the batter.
