Make a side dish the whole family will root for. Steam a head’s worth of cauliflower florets and place in a buttered baking dish. Then a make a rich white sauce with butter, onion, flour, milk, black pepper and nutmeg. Stir in some shredded Cheddar cheese until it’s melted, then pour over the florets.
