An easy dough is started with flour, baking soda and apple fritter spices like freshly grated nutmeg. Egg, sugar and melted butter are whisked together in a separate bowl, then the cooked apples get thrown in. Another secret to this recipe is sparkling cider! It has a good flavor and the carbonation adds a little lightness. After mixing everything together, use two spoons to scoop medium-sized balls into a couple of inches of hot oil and fry on each side for about 2 minutes. Remove from oil when golden-brown and cooked through and let them drain on some paper towels.
