I love Allrecipes contributions and use them all the time, how ever, all the Enchiladas recipes I have found in Allrecipes, are not close to the original recipe, and give enchiladas bad reputation. Enchiladas are not a cheesy, creamy dish. All it is is a warmed up corn tortilla filled up with shredded boiled chicken and covered with a light mexican tomato or tomatillo salsa (just tomato/tomatillo, onion, peppers,salt and pepper to taste, boiled and blended with out water). If you like some, just SOME! shredded mozzarella cheese on top and a dab of sour cream. Simple! the filling is never a cooked chicken dish and the sauce is not a creamy, chicken-soup sauce. Try the simple way and you will love it. A lot healthier too!
