@ JoeD The reason that the fish is being grilled flesh side down first is that the fish, when fully cooked, tends to break apart. If you are cooking it on an outdoor grill, you can lose a lot of meat to the grill. Also, finishing with skin down makes it easier to plate. The marinade should only caramelize lightly due to the short cooking time, and the marinate stays with the fish do to its' absorption in the marinade bag.

I am not a guy to grill fish but this looked good so I gave it a try. All I can say is WOW. This turned out great. I usually put lemon or tartar sauce on my fish (I am a beef guy) but this was wonderful! The wife, who has eaten loads of salmon over the years, loved it. Thanks, I am now won over. I WILL use this again.
