Watch how Chef John will turn the ancient grain farro into delicious, tender, and super crispy cakes. First he cooks the farro in seasoned liquid and lets it drain to remove excess moisture. Red pepper, Parmesan cheese, egg, and seasonings to taste are added to the farro and placed in the refrigerator to chill. Then the mixture is scooped into a hot pan with olive oil and fried on both sides until very crisp. Chef John presents them topped with creme fraiche and golden trout roe, but there are so many other ways you could serve these farro cakes: use them as a base for eggs Benedict, or add a little grated Cheddar and apple and serve them with pork chops.
