This can be made into a delicious Alfredo Sauce. I boiled it in chicken seasoning broth then pureed it with he seasoned water and a little cream. Added some flour to thicken the sauce. I did not use any oil or butter. Delicious. Then I added very little mozzarella and parmesan and heated it. I can add either chicken or shrimp. I can't use oil in my cooking or a lot cheese and butter. So this is a great Alfredo Recipe alternative. It is Delicious and As healthy as you can make. Thanks Chef John for this Recipe. This is a good base recipe for healthy sauce.

Use chicken broth or a packet of chicken seasoning in the water when cooking the cauliflower.

This looks too yummy! I like that I can probably whip this up quickly on a weeknight and I'm thinking the leftovers would heat up well. Can't wait to try it!
