This bread, (cake), is EXCELLENT! I cut the recipe in half b'cuz I had only 1 loaf pan. I used 1/2 teaspoon of cinnamon b'cuz I wanted "strawberry" & not cinnamon bread. Also used butter instead of the oil. Butter just makes everything taste so much better! :^) I was leery on the 2c of sugar so I cut it & used only used 1 1/4c sugar in my batter. Always taste as you blend, that way you'll know if it's sweet enough before it's too late. I used 3c of fresh strawberries, diced them and then sprinkled 1/4c of sugar on them & threw them into the fridge for 30 min. I added a tablespoon of vanilla in w/ 1c of chopped walnuts. Once I removed the diced strawberries from the fridge, they had formed a nice glaze w/ the sugar. (Which is why you really don't need 2c of sugar, you already have sugar on the strawberries but to each it's own). I don't like extra sugary cakes, etc. Once I incorporated all my ingredients, I tasted my batter to ensure it was sweet enough and it was perfect. My bak
