We make these all summer long with all different toppings. LOve the recipe for summer... keeping the heat out of the kitchen! My family prefers bread flour over reg. ap flour. We've learned to move quick and fast putting on the toppings over the grill. Cheese is not a fun task of getting off an infrared grill grates.

I think bread flour makes a crust with a lovely texture. Light and slightly chewy

I think the flour is a matter of taste. I hate using bread flour and prefer the high gluten flour. It really depends what texture you like in a crust. Very thin, crispy crust, in my opinion of course--not for everyone, is best and best with high gluten flour.
