Penne and Vodka Sauce

This video shows you how to make traditional penne with vodka sauce. Pancetta is sautéed in a little butter, and then simmered in a vodka, tomato, and cream sauce. The vodka doesn’t add flavor so much as draw deep flavors from the other ingredients. As it cooks, it develops into a rich, velvety sauce that’s amazing over penne pasta. Parmaesan cheese is cream colored. Remember this is a video and lighting changes the color, not the cheese. There are also differences in heaavy cream. Heavy cream that you can get directly from farms is heavier than what is in the stores allowing for a longer shelflife from stores. I am not sure I would want a heavy cream much heavier than what I see in the video. It can't be good for the heart.

I made this exactly as written with half and half instead of heavy cream only because I had it on hand. This sauce is delicious. Thumbs up from the husband also. The flavors blend well together and it takes much more complicated than it actually is. I used real pancetta and Ithink that makes the sauce.

Made this for dinner tonight and it was excellent. I added chopped onion and garlic to the pancetta. I would definitely make this again. Quick, easy and delicious.
