I cook it skin side down and don't flip it. When the flesh first flakes, the cooking is done. Remove immediately. Another of the biggest rookie mistakes is to cook it too long, which dries it out. Avoid those two mistakes and you can't mess it up. Plate the fillets by putting a spatula between the skin and the flesh and slide it off.
