Chicken and Mushroom Chimichangas
This video shows you how to make chimichangas stuffed with a tasty chicken, cheese, and mushroom mixture. Chimichangas are essentially deep-fried burritos—only Chef John is giving them a quick shallow-fry before popping them in the oven. The chicken and mushroom mixture includes chopped poblano peppers, onions, cayenne, smoked paprika, and Mexican oregano. Add pepper Jack cheese to the mix before you roll everything up in warm flour tortillas. It’s super easy. I don't have a whole family to feed so I buy the small "Truly Hand-made Tortillas" from Trader Joes and they work great! Mini Chimichangas! The filling for this awesome recipe also makes great quesidillas! :)

Kara, although Mission's are good. I would highly suggest that if there is a Mexican bakery in your town go to it first. They usually have homemade tortillas there. I always ask for the traditional tortillas for ours. They have a better flavor and nothing beats homemade.

Kara, I would use large Mission tortillas. Those work the best. But I mostly make mine from scratch. If you can find Mission, that's what I would use. :)
