Pesto Chicken Penne Casserole

This video shows you how to make a quick-and-easy, creamy chicken pesto. Prepared pesto and Alfredo sauces combine with cubed chicken, tomatoes, spinach, and Italian cheeses to create an impressive one-dish meal you bake in the oven. Topped with a bread crumb and Parmesan cheese mixture, the casserole comes out of the oven bubbly and beautifully golden brown. And the best part: it’s even better on day two! Watch the video, then get linda’s 5-star recipe for Pesto Chicken Penne Casserole. This is a terrific recipe for using up leftover chicken. It works great with rotisserie chicken, too.

At a whopping 760 calories per serving, I must say it's not exactly diet-friendly. I did make it and it was good but there has got to be a way to lighten this dish up! Maybe it was the jarred pesto sauce I used. There was a layer of olive oil floating on top of that.

Hi. I was wondering if there was something else to substitute the tomatoes? My husband is highly allergic to tomatoes. Any suggestions? Can I just leave out the tomatoes, or will that make it kinda dry?
