At a whopping 760 calories per serving, I must say it's not exactly diet-friendly. I did make it and it was good but there has got to be a way to lighten this dish up! Maybe it was the jarred pesto sauce I used. There was a layer of olive oil floating on top of that.

Hi. I was wondering if there was something else to substitute the tomatoes? My husband is highly allergic to tomatoes. Any suggestions? Can I just leave out the tomatoes, or will that make it kinda dry?
