Bacon and Egg Breakfast Tarts

If you use mini muffin tins to create the shells I imagine a quail egg would be perfect in place of chicken eggs. The bonus is they don't contain salmonella so if you like a runny egg it's a bit safer, especially for kids or adults with compromised health.


schwallini, no reason why you can't use scrambled egg. I make in tiny mini size with scrambled egg. I precook chopped bacon, put in the bottom of uncooked pastry shells. Whisk your eggs with a bit of milk/cream and divide between your cups. Baking time should be about the same, but when the eggs are puffed and golden on top they should be done. Separate an extra egg, add the yolk to other eggs, use the white to brush on sides of pastry (not bottoms)to have a nice presentation finish.
