My wife does great with the bacon in all recipes. She uses 2 paper towels and nukes the bacon while she does other things! The bacon turns out perfect and keeps some of its flavor as well! All microwaves are different so it takes time to know the setting. She always did it perfectly and I also can now! I think this soup would go perfect with a chicken salad sandwich!

Why discard all that flavorful bacon fat? Use it in place of oil to cook veg.

I agree - maybe some minced garlic with the onions and a little cayenne pepper for a little heat. Looks good, though, but I would peel the potatoes - personal preference is all.
