Sounds a little bland. I would have to spice it up some for my tastes. But it's a good base.

I agree - maybe some minced garlic with the onions and a little cayenne pepper for a little heat. Looks good, though, but I would peel the potatoes - personal preference is all.

Why discard all that flavorful bacon fat? Use it in place of oil to cook veg.
