I hate. Cook, everyone knows that, but the other day I came across your how to make butter, recipe and it was just too easy. So I said, what the heck, I will try it. OMG!!!! Loved it, and so did everybody else. Only one thing......nobody believes I did it.

I've made this cheese the old fashioned way which is easy but takes 3 days. Mix 1 gallon of milk with a cup of kefir, buttermilk or sour cream. Let it sit 3 days in a warm location. Heat the mixture in the oven for 1 hour at 250F. Cool completely and follow the same directions to separate curds and whey. If you want this a little drier, set a pot of water on the cheese for an hour before removing it from the cheesecloth. The liquid will squeeze out. I found that the cheese tastes best a few days later. Chef John says this is more expensive than store bought but I figure it's a bit less but oh so fresh and healthy. BTW - use the liquid whey instead of water for making bread. Wow!
