Once you make this recipe for Thanksgiving or Christmas dinner, you will never do it any other way. Someone asked "why the slow cooker?" and the great thing about the slow cooker is it keeps them warm without having to rush and get the potatoes done at the last minute. The slow cooker also makes them so creamy! The only thing I suggest is putting a kitchen towel under the lid of your crockpot to absorb the condensation to avoid the recipe getting too runny.


I made these last year for Thanksgiving, if you use fat free cream cheese and light sour cream it makes a dent in the calories. I prepare 5 lbs of potatoes so I make them a day ahead. Then warm them in the crockpot while preparing other sides. It saves me time Thanksgiving day and we have warm delicious potatoes without that last minute rush to mash the potatoes.
