King Ranch Chicken Casserole

I have lost ALL respect for, "Chef" John (previously I was a regular follower of his) after watching this video wherein he uses canned, condensed, cream soups in this recipe. No self-respecting chef would use that sodium-laden, expensive, chemical . Cream soup base is SO easy to make (butter, flour, chicken broth), and you don't have to include the disclaimer, (as "Chef" John does) "you probably don't want to read the labels"

I make mine similarly, however, I do not use tortillas...they get too tough. I use a layer of roughly crushed (not too broken up)Doritos (I prefer the Nacho Cheese flavor). There is no need to put sauce on the bottom of the pan. Other than that it about the same, I just don't add the extra spices as the Rotel tomatoe & Chile is just perfect for me.

you stated a couple of times not to put layer of tortilla on the bottom... why not? what happens when if you do? how should we do it then?
