Chicken Caesar Spring Rolls

This is a terrific, inexpensive, and low-carb way to use up leftover chicken! In this video, you’ll see how to make simple chicken wraps using super-thin rice paper (also know as “spring roll skins”). You’ll see how to prepare the rice paper and what to avoid as you’re working with it. Then you’ll see Chef John wrap his spring rolls around layers of romaine lettuce, strips of cooked chicken, and red bell pepper. Then you’ll discover how to fold it up into a nice tight bundle. It couldn’t be easier. You’ll also get tips for storing and serving them. These easy wraps make a delicious appetizer or a low-carb lunch served with a Caesar dressing. Thank you for the recipe. I marinated the chicken overnight in natural yoghurt and Tandoori paste. Family made their own using varied fillings including cucumber, tomato, red onion, celery, spinach, etc. a really lovely recipe for our summer evenings. A winner. :)

Interesting, will the rice paper remain soft in the paper towel (i.e. if I made it in the morning and took it to work for lunch? I'll have to try that this week for lunch. www.loveofcuisine.com

Difficult to follow as the sound track is garbled.....looks good, sounds bad and lacks suggestion as to making caesar dipping sauce.
