First off, I could careless if this Huevos Rancheros recipe is authentic!! Although there are different variations to Huevos Rancheros, it wouldn't matter if it's authentic or not!! The arguments are NOT necessary!!

Hmm, you people are incorrect. Many "authentic" Mexican dishes DO in fact contain Cheddar Cheese. Mexico is a Huge country with many different in-cultures, so saying something isn't "Mexican" is a huge blanket statement. Chihuahua cheese is cheddar with a cute name. There are many different types of "authentic" anything in a country as large and as diverse as Mexico. Bacon is quite common in Mexican cooking, don't know why one would claim differently. Butter is too, introduced by the Mennonites, it is now very common in Mexican cooking. In central Mexico, one would be hard pressed to find FRIED eggs, as they are usually poached.
