Chef you make me smile...question, can I omit the sugar to make the sauce carb free?

Chef John, Great video for making this wonderful sauce. I've been fermenting for awhile now and have learned that when you boil your ferment much of the good bacteria is killed. Is there a way to make this sauce without the heat?
