How to Make Homemade Sriracha Sauce

Never be left without this addictive Asian-inspired hot sauce again. In this video, Chef John shows you how to make your own homemade sriracha sauce. It's easy! Sriracha is actually a simple combination of vinegar, hot red chile peppers, garlic, salt, and a little light brown sugar. The key here is to let it ferment briefly before processing it in a blender and reducing the sauce. See how it’s done! It’s also a tremendous and thoughtful food gift. Watch the video, then get the recipe for Chef John’s Homemade Sriracha Sauce. Try this spicy, tangy condiment on all kinds of foods including fried eggs and Asian noodles.

I live in hot & humid climate and don't have a cool dark place to let this ferment. Can I ferment this in the fridge? Also, how long will this sauce keep? I presume it must be refrigerated?

I made this exactly as posted, is wonderful In texture and flavor.. The fermentation formed a white scum, removed it and continued.. it took about 45 minutes to render-down to a firm consistency...
