Chef John's Coconut Chicken Curry

I have had this in my recipe box since last year wanting to make it. I'm going to give it a try for sure! For those that don't wan the bitter taste of the lime, try using kaffir lime leaves. These are used in Thai cooking frequently, similar to how Americans use bay leaves. Also, Thai basil is delicious if you can find it (Ranch 99 has it), it is a little sweeter than USA basil.
