How to Make Caramel Chocolate Coins
In this video, Chef John shows you how to make rich dark chocolate coins—essentially a ganache. You’ll see how to use a hot water bath to gently melt your dark chocolate. You’ll develop a candied sugar mixture with heavy cream into a dark caramel sauce. Then you simply drop spoonfuls of the candy onto a cookie sheet, sprinkle with sea salt, and flatten with a pan into coins. After you chill the coins, they’re ready to eat, either plain or dusted with cocoa. You’ll be amazed how a little sea salt explodes the chocolate flavors.
